Do you celebrate St. Patrick? And if you do, you are green beer beverage type or beef and cabbage Corned while wearing the green and watching Riverdance guy? Well, I must say I've always tried to stay away from the crowd day drinking crazy St. Patrick who seem to fill most of the bars in New York, but do love a chance Corned Beef eat and drink something and Bailey Guinness (and of course green!)

I try to bake a dessert fun using some of these seasonal ingredients every year and this time around making win this cake is ultra-creamy cheese. If you like Irish Cream you'll love this recipe. Since cheesecake dessert is the quintessential New York, giving it a festive touch just seemed like the thing. It seemed like a perfect way to represent New York, while paying tribute to my Irish roots! For this recipe, I used BAILEYS® Coffee Creamer who is rich, thick and full of Irish cream flavor. I served in my language class Mamas sign in the middle of the day so I think the version without alcohol was appreciated. (. Well ... he was a mom group of toddlers, a Friday so who knows;))

I started with a crust from chocolate cookie zero (which is so much better than the kind Oreo and certainly what I will do from now on.) precooked crust is filled with creamy filling and topped chocolate chips for some added crunch. (I melted mine and swirled on top of the filling, but some simply sprinkled on chips would work as well. I really just wanted some added texture to compensate the ultra creamy filling.

I really liked this dessert. texture is out of this world and flavor of coffee BAILEYS® Creamer is about. It goes perfectly with dark chocolate into the crust and the filling, making it an easy dessert without baking that could not be more festive for the holidays to come!

Ingredients
for crust:
  • ½ sugar white cup
  • ⅓ cup flour purpose
  • ⅜ powder cup unsweetened cocoa
  • 1 pinch salt
  • ¼ cup melted butter
for the filling:
  • -ounce August 2 packages cream cheese to room temperature
  • ½-3/4 cup of Bailey
  • 1 teaspoon vanilla extract
  • ⅓ cup chocolate chips or melted chocolate or chocolate shavings for garnish.
Instructions
  1. Preheat oven to 375F.
  2. In a medium bowl, combine sugar, flour, cocoa powder and salt. Add melted butter and mix until moistened. Press the mixture into the crust of a 7 inch springform pan * and bake for 10 minutes.
  3. While the crust cools, whisk cream cheese on high until smooth. Add ½ cup of Bailey and vanilla extract. Taste the mixture and add the remaining ¼ cup of creamer if desired, 1 tablespoon at a time until desired sweetness is reached. **
  4. Transfer filling in cooled crust and smooth with an offset spatula. Sprinkle with chocolate shavings, or drizzle with melted chocolate or chocolate chips.
  5. Cover with plastic wrap and refrigerate for several hours, until the filling is set. (You can speed up this process in the freezer.)
Notes
You can use a springform pan 9 inches, but I would like to 1½ x recipe

* most liquid you add to fill the looser it will be. I added the full ¾ cup and it was perfectly creamy and dreamy, but if you prefer a little more solid texture add a little less.
