Vanilla Bean Peach Bellinis

I recently heard the bitterest title. It has something like "30 activities for the last 30 days of the summer!" Already? How were just whiz by? Now I always acknowledge that I am an autumn girl through and through, but this summer has been quite large. We only had a handful of terrible "to-do-anything too-hot" days here in New York, and playground and sprinkler Hugo had a blast. We also managed to squeeze in our fair share of patio cocktails happy hours in New York are simply the best. a few people watching, some warm wind, and overall perfection of the summer.

We are fortunate to have our own little garden space here in the city and when he was under construction for what seemed like the entire summer, it is now clear and ready for our daily use. We went there for our all-morning coffee while Hugo turns around, grilling in the evening while Hugo turns around, cocktails all afternoon ... you l guessed. It is worn outside, we have a refreshing cocktail to sip summer and everyone is happy.

Vanilla Bean Peach Bellinis

I really love this combo, fresh peach puree, vanilla bean syrup and sparkling wine to top it all is so refreshing and delicious. A twist on regular bellini, the vanilla flavor is strong and adds such a perfect touch. I made a simple but traditional syrup added Nielsen Massey Vanilla Bean Paste to add the flavor of strong vanilla. (At the vanilla bean would also work well!) It is so easy to make in advance and preparation for your next brunch or cocktail hour. I think even by a whole batch in a pitcher would be fabulous. SO you have heard here folks- Summer is almost over. Enjoy the season (and the patio season) in style with a soft drink in tow!

Ingredients
  • 1 peach, peeled and cut into pieces
  • ½ cup sugar
  • water
  • ½ cup
  • 1 teaspoon Nielsen Massey Vanilla Bean Paste ( or ½ of a Vanilla Bean)
  • sparkling wine / prosecco / champagne of your choice
Instructions
  1. Start by making the vanilla syrup:
  2. in a small saucepan, combine sugar and water and stir over low heat until mediu-dissolution. Add the vanilla paste or vanilla, broke with all the seeds scraped out. (You can leave the pod in for added flavor)
  3. Mix well and transfer to a small glass jar to cool
  4. For the peach puree :.
  5. Use an immersion blender or food processor to process the pieces of peaches until smooth. Refrigerate until ready to use
To assemble :.
  1. In each glass, add 2 tablespoons of mashed fishing and 1 teaspoon vanilla syrup (you extra, but its great to have in the fridge for making cocktail or a flavoring coffee!) your top off with sparkling wine and serve immediately.
