There are no secrets, I like to celebrate Cinco de Mayo here. Since my blog started not a year has passed without a festive feast or two. food and flavors of Mexico are by far my favorite so I never seem to struggle with ideas that fit that bill. Between Strawberry Margarita Cupcakes, Traditional Tres Leches Cake Bars Margarita Limey, I covered your festive dessert needs. That being said, I'm still a girl who loves the options and I could not let a year pass without giving a couple more for your celebration.
These churros Cupcakes are fun for the guaranteed crowd. A small fluffy vanilla cake topped with cinnamon sugar, a smooth cheese frosting vanilla cream over cinnamon sugar and a little mini "churros" just to be sweet. (Which is really just a piece of pie crust covered with cinnamon sugar. I've seen versions topped with tortilla chips too.) I served them with a group of friends earlier this week and were polished off almost instantly. I think it would be the perfect dessert for a dinner party, or really any time you want something full of sweet cinnamon goodness.
- 1 lot perfect Vanilla cupcakes (both the cupcakes and the frosting)
- 4 tablespoons butter, cold
- ¾ cup all-purpose flour
- pinch of salt
- 1 tablespoon sugar
- 1 cup sugar
- 3 tablespoons of cinnamon powder
- in a medium bowl, mix together the sugar and cinnamon. Put aside.
- While the cupcakes are baking, mix the "mini" churro ingredients in a food processor for 1-2 minutes or until the ball is formed. Roll dough on floured surface to ⅛ inch thick. Cut into strips ½ inch wide and 2 inch pieces of long cut on a diagonal angle. Turn the pieces of dough and place on a cookie sheet lined with parchment paper. Bake at 375F for about 10 minutes, or until golden brown.
- When they have cooled, mix gently into the mixture of sugar and cinnamon until well-coated. back to the cookie sheet until use.
- When baked cupcakes have cooled, dip the top of everyone in the cinnamon / sugar mixture- giving everyone a light coat.
- Pipe or spread the frosting on the cupcakes and dust with cinnamon sugar. Top each cupcake with a "churro." Have fun!
