One Pot Chili Mac and Cheese

You guys there is not much to say about that meal. It's simple. It's easy. It can be thrown together in a short time and it is good . Like most comfort foods, it is comfortable and welcoming and delicious. Best of ALL- whole family will love. I base this statement on the speed with Hugo devoured his hand, asking "more more more!" Sign language, and the report of my neighbor's children 4 and 2 years ate every bite. (They just had a new baby so I gave them a little too, another advantage of the area- it freezes and moves well!)

I just can not get enough of these simple dinners, pot. They make my life so easy. I can spend a short time to prepare a meal that will feed us for days. And when Hugo love something as much, I further feel relieved that I have supported for a meal or two.

Like most meal of this nature, there are really a lot of room for your own interpretation. I used ground turkey, but of course beef, chicken or just extra beans instead are all fine. You can use more peppers, more beans, or leave these things. I think of a good basic meal recipe is wonderful that you should feel free to change here and there to suit your own preferences. This is certainly a new family favorite- I hope you like it too!

One Pot Chili Mac and cheese
Ingredients
  • 1 large onion, diced
  • 2 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 tablespoon paprika spoked
  • 2 garlic cloves, chopped
  • 2 lb ground turkey (beef or chicken would work too)
  • 2 peppers, diced
  • 1 15 oz can black beans, rinsed and drained
  • February 15 boxes oz tomato sauce
  • 16oz elblow macaroni
  • 2 grated cheese cups (we used cheddar and some jack)
Instructions
  1. in a large pot or heat the Dutch oven 2 tablespoons oil on medium-high heat until hot. Add onions and spices, and cook for 3-5 minutes until soft. Add peppers and garlic, and cook for a few more minutes, or until the onions begin to brown and garlic is fragrant.
  2. Add ground turkey. Separate with a spoon and cook, stirring often, until all the meat is cooked.
  3. In the pot add the beans, tomato sauce, 4 cups of water and macaroni. Increase heat to high and bring to boil. Once boiling, reduce heat and cook for 8-12 minutes, or until the macaroni is cooked.
  4. Stir in cheese until melted. Have fun!
