I am so happy to share this glorious fun with you today. Not only because it is composed of brownie- cookies with salted butter caramel sandwiched together every whoopie-pie-like, but because I was doing these for "Virtual" baby shower a friend very special blog! Krissy Krissy creations is to have a little boy any day now, and even though she lives too far away for a celebration, some friends and I wanted to throw a little "party" to celebrate the arrival next baby.
I met Krissy last fall Foodbuzz festival, and since it was the day after I joined, and it was one of the first people I saw, after he come, I will always have special memories of that weekend. We share a love for cooking and I enjoyed getting to know Krissy during the past year.
In my following blog Krissy, it has become a known fact that the girl loves chocolate. Her husband Steve is more than one type of vanilla, but I know nothing Krissy loves chocolate- brownie fudgy-especially sticky. When I saw this Recipe- I thought it would be perfect for the shower. Two, the brownie-esque thick cookies and salted caramel filling is up to the driveway of Krissy. (And mine. I ate about 5 of them.)
I am a little skeptical of this recipe after seeing the dough. It is more like brownie batter as cookie dough, but after he let rise in most crackly, never making fudgy. I can not wait to experiment with this cookie. The possibilities for fillings and mix-ins are endless!

- 12 oz dark chocolate, chopped
- 3 tablespoons butter
- 2 eggs
- ⅔ cup sugar
- 1 teaspoon vanilla extract
- ¼ cup all-purpose flour, sifted
- ¼ teaspoon of baking powder, sifted
- salty filling caramel cream: sugar confectionery
- 1 cup butter (2 sticks)
- 2 cups
- ¼ caramel cup sauce
- ½ salt teaspoon sea
- Turn butter in a saucepan over low heat and gently stir until melted. 7 oz Add chocolate and stir until smooth. Cool slightly.
- Place the eggs, sugar and vanilla in the bowl of a stand mixer fitted with a spatula and beat for 15 minutes or until pale and creamy. (I know that sounds a lot, but I think what makes the texture of the cookie.) Add flour, baking powder, melted chocolate mixture, remaining 5 oz chocolate and mix just to combine. (Do not over mix.) Refrigerate the dough for 10 minutes, but no more. The dough should still be slightly sticky, but not liquid.
- Spoon 2 tablespoons of the mixture on parchment lined baking sheet. Bake at 350 degrees for 8-10 minutes or until puffed and cracked. Cool completely on trays before transferring to a wire rack
- Place the softened butter in a bowl and beat until fluffy. Mix in confectioners sugar and salt, add caramel and beat until smooth and creamy.
- Spread or pipe the frosting between two cookies. Sandwich together and enjoy !!
