Cinnamon French Toast Muffins

Cinnamon French Toast Muffins -

I have a short message and sweet for your friends today. I'm a little tired with is packed and ready to head the Wisconsin snow for the week (assuming my flight out,) but I could not resist sharing this delightful idea breakfast with you in advance ! I made them for brunch recently and would be another good idea for Christmas morning or any day before or after you want something easy and comforting.

Cinnamon muffin is topped with pieces of real french toast that are brushed with maple syrup after cooking and topped with cinnamon and sugar. They really taste like french toast and easy to throw together in advance and warm slightly before serving.

French Cinnamon Toast Muffins
Ingredients
french garnish toast
  • 3 tablespoons milk
  • 1 egg, lightly beaten
  • 6 slices bread, cubed (challah, french or something similar is preferred.)
  • ½ c. Cinnamon
muffins
  • 1 cup milk
  • ½ cup melted butter
  • 1 egg, lightly beaten
  • extract 1 teaspoon vanilla
  • 2 cups flour
  • ¾ cup packed brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
garnish
  • ¼ cup maple syrup
  • 2 tablespoons sugar
  • ¼ cinnamon teaspoon
Instructions
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Combine all the French toast topping ingredients in a bowl and set aside.
For Muffins:
  1. Combine milk, melted butter, egg and vanilla extract in medium bowl
  2. Mix sugar, flour, baking powder and salt in another. larger bowl.
  3. Combine the milk mixture and flour mixture and stir until just incorporated, not over mix.
  4. Pour batter into muffin 12 greased or lined cups.
  5. French bread Spoon filling evenly over dough; press lightly.
  6. Timed Bake 20-25 or until a toothpick inserted in center comes out clean. Immediately brush muffins with maple syrup.
  7. Combine sugar and cinnamon in a small bowl. Sprinkle on frozen muffins
  8. Cool 5 minutes. Serve warm
