One year Superbowl Sunday, I had an idea. I felt creatively stifled me, and I knew I had to do something big to change that. I wanted to spend more time to do things, and less time feeling bummed not to do that. So as I sat around with my friends and family- I mentioned the idea to start a cooking blog. I spent this week thinking about it, and one year ago today, I start something I have learned to love so much. A party is to do not you think?

Some thing bright, fun, and of course delicious needed. And what screams more funfetti celebration? (Certainly I feel special.) Add some frosting creamy vanilla sprinkles and even adorned these cupcakes really made my day.

... because we need to celebrate those special moments in life do we?

Funfetti Cupcakes for my Blogaversary and a Giveaway!
Ingredients
  • ½ cup butter
  • 1 cup sugar
  • 2 whole eggs (temperature room)
  • [] 1 extract tablespoon vanilla
  • 1½ cup flour
  • 1 teaspoon baking powder
  • ⅓ cup milk (temperature ambient 1945021)
  • ⅓ cup sprinkles assorted bright colors + more for the top of icing
  • vanilla buttercream
  • 2 sticks unsalted room temperature buter-.
  • 2½ cups powdered sugar
  • 2-4 c milk or cream
  • 1 tablespoon bean paste coffee or vanilla extract
  • Sprinkles to decorate
Instructions
  1. Preheat oven to 350 degrees F.
  2. butter and sugar in the bowl of an electric mixer until fluffy and pale consistency about 3 minutes.
  3. Scrape bowl and add the eggs and vanilla and beat until smooth. Mix dry ingredients in a separate bowl. Alternate adding the dry ingredients and the milk gradually, stirring only until just combined. Do not over mix! Fold watered and pour into cake pans - complete ⅔ of the way. Bake for 18-20 minutes. Cool and frost
For Frosting :.
  1. In a large bowl, cream butter until fluffy and pale. Gradually add powdered sugar and beat until well combined and thick. Add the vanilla paste and 1 teaspoon of both the milk until frosting is creamy and good propagation. . Hose / Spread over the cupcakes and top with sprinkles
