Hello from the West Coast! I went to Los Angeles this week and I think my body has finally set the time zone. I'm really suited for casual beachy atmosphere and did not want to pick up my computer once. Also- I started reading the language of flowers on the plane here and I am not physically capable of doing anything else but read that until I finished. (Really great book if you like that sort of thing.)
But here I AM- better late than never with a super easy, no- cooking recipe that is perfect for summer cook-outs and parties. The ingredients can be thrown together in minutes, given a quick thrill and be ready to eat soon after.
The base is a traditional rice Krispie feast with graham crackers and chocolate chips mixed. The top of the bars are coated with marshmallows that get nice and toasty- giving each bite a real S'mores- like taste. I love the simplicity of these for days when the oven is simply not an option. I think not many flavors remind me happy was more meetings that melty, roasted marshmallows, chocolate and graham crackers! Have a great weekend !!

- 3 rice krispies cups
- 4 sheets of graham crackers broken into bite-sized pieces
- 1 10 oz bag miniature marshmallows
- 3 tablespoons butter
- ½ chip chocolate cup
- in a large bowl, combine krispies, chocolate chips and graham cracker pieces. Reserve 1 cup marshmallows. Set aside
- In a medium saucepan over medium heat, melt butter. Add the remaining marshmallows and mix with butter until thick and creamy consistency.
- Pour into the bowl with Krispies and use a greased spatula to stir everything. Press into an even layer in a greased 8x8 pan.
- Top with marshmallows reserved. Either use a kitchen torch to grill up or stick skillet under the broiler for a few minutes. (Watch carefully.)
- Let cool in refrigerator for about half an hour, then cut into bars and enjoy!
