Whole Wheat Crackers Cheddar -

Most toddlers of mothers would agree that there are usually snacks in your home we like to call "snack money." you know the thing that no matter where or when or what situation your child will be happy engulf as much as you give them? We have three here. Grapes, cucumber slices, cheddar and rabbits. Dang those little crunchy things are actually pretty good and addictive! I found myself mechanically dipping my hand in more than one occasion box. I do not mind eating processed snacks Hugo occasionally, but he loves so much, (and seriously eat a handful every day if I let him,) I thought it was time to find a healthier version home.

These crunchy snacks are made with whole wheat flour, cheddar cheese, butter, and not much else. I added a little salt and smoked paprika for fun, but you can do a pinch of garlic powder or other spice you like. They were made, cooked and ready to eat in about 30 minutes, which is great for small hollow last minute. Next time I think I'll make a ginormous batch and freeze them as we go through them as quickly.

Whole Wheat Cheddar Crackers
ingredients
  • 8 tablespoons unsalted butter, cold
  • 3 cups shredded cheddar cheese
  • 1½ cups whole wheat flour
  • smoke paprika dash
  • sea salt for sprinkling
Instructions
  1. Preheat oven to 350F.
  2. In the bowl of a food processor, combine the butter, cheese, flour and paprika. Process for about a minute or until the mixture comes together into a ball.
  3. Press the dough between two sheets of parchment paper and roll to ⅛ inch thick. Use a rotary cutter to cut the edges and create a large rectangle. Use a small cookie cutter to cut out small shapes our use of a rotary knife to cut the dough into 1-inch squares. Use a skewer to poke a hole in each cracker and transfer to a parchment lined cookie sheet form with slightly spaced crackers. (They do not spread much.) Sprinkle with sea salt.
  4. Bake for 10-13 minutes, or until lightly browned and get grilled on the edges. (The cooking time depends on the size you cut them to be.)
  5. Let cool a bit before eating crackers.
