Every time I go to the grocery store, I take a bunch of bananas, and everyone time they turn brown before I eat. See when it comes to actually eat bananas all, I just love the mature and even a little green. No bananas soggy too sweet for me thank you! I am happy to discard those slightly speckled in a smoothie or even grain, but more often than not, they are damn brown before I remember that I forgot to eat.
This is why, my friends, you can find tons of recipes bananas here on the blog. I really love you cooking with bananas. Riper best when it comes to cooking, and they add a wonderful texture to baked goods! Ripe bananas this week ended in this cake Banana Swirl Cinnamon Crumb was right to die.
The cake itself is moist and soft, with a cinnamon swirl slimy and lots of sweet crumb topping. hot from the oven it almost melts in the mouth, the perfect match with your morning coffee. I love cakes like this because they are easy to make and impressive enough to add to a brunch spread or even just to snack on. (It really is not too sweet.)
If my banana purchasing problem gives delicious treats like this- I think it's the best problem always right?
- ¾ cup butter
- 1½ cups sugar
- 3 eggs, room temperature
- 1 teaspoon extract vanilla coffee
- ¾ cup buttermilk, room temperature
- 1 cup mashed bananas
- 2½ cups all purpose
- ½ teaspoon salt coffee
- ½ teaspoon of baking soda
- 1 teaspoon baking powder
- 1 cup brown sugar
- 1½ teaspoons of cinnamon
- 1 tablespoon unsweetened cocoa coffee powder
- 2 cups flour
- ⅔ cup brown sugar
- 1 teaspoon of cinnamon [butter
- 6 tablespoons melted
- in a small bowl, combine the topping ingredients and set aside.
- Add flour, sugar and cinnamon in a medium bowl. Stir in melted butter until large crumbs form
- Preheat oven to 350F. Butter and flour a 9x13 pan and set aside.
- Cream together butter and sugar. Add eggs and vanilla and beat on high until smooth.
- In another bowl, whisk the flour, salt, baking soda and powder.
- The low speed, mix the dry ingredients into the butter mixture until just combined. Add buttermilk and bananas.
- Spread half of the batter into the pan. Sprinkle the filling evenly over the dough, then spread the remaining batter on top.
- Use a butter knife to gently swirl the filling into the dough. Sprinkle crumb mixture on top.
- Bake for 45-55 minutes or until a toothpick inserted into the cake comes out clean.
