Brown Sugar Shortbread -
Until recently I did not have much interest in shortbread. It has always been the Girl Scout cookie that seemed less fancy, so I never try. I do not think that something so simple could actually be good so I went with the chocolate covered, peanut butter, cookies loaded with caramel instead.
I really do not think I tried shortbread until just a few years, when I did a play with a girl from Scotland who brought some opening night. I could not get over the way it was perfect! Melt in your mouth, not too sweet perfect. The cookie has an almost flaky texture with butter crumb that makes it all the more irresistible. I'd love to do a lot of these to eat next to a coffee or tea.
Another reason I love this recipe is how simple it is to do. I can almost guarantee that you have all the ingredients on the very short list at home already, which means they can be performed in minutes. You can cut them into any shape you want, sprinkle on a little extra sugar and there you go. These can of course be dipped in chocolate and sprinkled with things, or even stuffed with frosting or ice cream, but they are so big that is, I'm not sure it is even necessary!

Brown Sugar Shortbread
Ingredients
- 2 buttermilk cups softened
- 1 cup packed brown sugar
- flour 4½ cups all purpose
- sugar for sprinkling
Instructions
- Preheat oven to 325 degrees F.
- in using an electric mixer, combine butter and brown sugar until creamy. Add 3 to 3¾ cups flour. Continue to beat with mixer until the dough just comes together.
- counter Sprinkle with remaining flour. Knead for 5 minutes, adding enough flour to make a soft dough. Roll ½ inch thick. Using a pastry cutter or knife, cut the dough into strips or rectangles. (Mine was about 3 inches long and 1 ½ inches thick.) Prick with a fork and place on ungreased baking sheets. Sprinkle with sugar.
- Bake at 325 degrees F for 15 minutes or until edges are lightly browned.
