Woah that's a long way huh? Much is happening in this delicious treat ice .... Again Christina Tosi has created a complex and delicious dessert with layers of flavors. This pie is sweet, slightly creamy light, salty and actually quite. This is the perfect thing to wear to a barbecue or barbecue, because not only is it very refreshing, but it is a sure conversation starter-fire. I guarantee anyone who tastes it will demand all the flavors and ingredients involved. I for one love when that happens. :)

start with the crust. Now, perhaps you remember I mentioned earlier Friday that it was made of corn delicious biscuits. They are crushed to pieces and pressed into a pie pan. In the crust is filling that is made of sweet corn pudding, folded into a mixture of whipped cream. Everything is frozen for a few hours then ready to cut and enjoy. In the book, it is recommended to top the pie with local / fruit in season, so my organic berries were perfect. Tosi called pieces of this pie "slices of heaven" and I totally agree!

My favorite aspect of the pie filling was sweet corn Cearal milk. This was done by dipping milk with Capt'n Crunch cereal to leave the really absorb all the flavors. A pinch of salt and brown sugar were then stirred in, making it a truly unexpected treat. I could have just that right sipped all day, it was so good!

Overall, I really liked this pie. The recipes in this book got a lot easier for me, or maybe I'm just used at all stages now. Anyway, I'm so happy with how the project / experience will almost 6 months later. It introduced me to so many different ingredients and techniques that I surely would never have tried before. It was so helpful to challenge myself out of my comfort zone and I am so happy that we still have many recipes left !!

{Milk Bar Monday} sweet corn milk Cereals Ice Cream Pie
Ingredients
  • 225g of cookies corn (about 3 cookies)
  • 25g (2 tablespoons) unsalted butter
  • 1 recipe sweet corn cereal milk "Ice Cream" filling recipe below
  • sweet corn grain milk "Ice Cream" fill
  • 15g (1/4 cup) Cap'n Crunch
  • 25g (1½) light brown sugar
  • 12g (1 tbsp) granulated sugar
  • 12g (2 tablespoons) of lyophilized powder corn
  • ½ cornstarch c
  • ½ teaspoon kosher salt
  • ⅓ recipe (3/4 cup) sweet corn Cereal milk recipe below
  • 1 large egg
  • 1 cup heavy cream
  • ¼ cup sour cream
  • sweet corn milk cereals
  • Ingredients:
  • 100g (2¾ cups) Cap 'n Crunch
  • 3¾ cups cold all milk30g (2 tablespoons) light brown sugar
  • ¼ teaspoon kosher salt
Instructions
  1. Put the biscuits in a food processor and pulse until the texture resembles bright yellow sand.
  2. Transfer the ground biscuits into a bowl and add the butter. Using your hands, crumble the mixture between your fingers until it forms a ball. If it does not, add another tablespoon of butter. Press firmly in your pie plate.
  3. Using a rubber spatula, scrape the "ice cream" filling into the prepared crust. Freeze for at least 3 hours to resolve poor. Before serving, let the slices to thaw for about 10-15 minutes. Top with seasonal fruits / berries
For filling ice cream: ..
  1. Grind the Cap'n Crunch to a powder in a food processor
  2. in a large saucepan, combine Cap'n Crunch powered, sugars, corn powder, cornstarch and salt. Stir in milk cereal and eggs in a slow, steady stream, whisking until smooth.
  3. Heat the mixture over medium-low heat, stirring slowly but constantly until the mixture thickens (about 3-5 minutes). Scrape the mixture into a small bowl and refrigerate for 1 hour. (You do not want it to be too cold.)
  4. In a medium bowl combine the cream and sour cream and using electric beater- (ideally that has been cooled for a few minutes with the bowl) whisk to soft peaks. Do not whip too! Stir thick corn mixture for about 30 to 45 seconds until completely combined and slightly runny. At this point, it is ready to be poured into pie crust
For the cereal milk :.
  1. Crush cereal to the texture of coarse sand or gravel with your hands.
  2. Combine cereal and milk in a large pitcher or bowl and mix thoroughly. Let stand at room temperature for 20 minutes.
  3. Pass the mixture through a fine sieve into a small bowl. Press the milk cereal with back of a spoon or your hand.
  4. Whisk the sugar and salt into milk mixture.
