I know it's only Monday of Thanksgiving week, and the thought of planning what to do with your leftovers may be the farthest thing from your mind, but this just go away for a few days and you'll be so glad you did! Come Saturday, when your fridge is still full of mashed potatoes (we still have most of those who in some way), you can be grateful for something a little different, and this creamy, crunchy, pizza may be just the thing!

I saw a picture of it on my friend Carrie instagram few weeks ago and I had in my mind since. She ate at a local pizzeria, but I knew immediately that I had to find a way to make this amazing looking pizza at home. It is the ingredient list was pretty short and most of the things I had on hand. I had already planned to Slow Cooker Mashed Potatoes for the blog if what has been done remains the ideal basis for this pizza.

The distribution of this delicious pie goes like this: crust house pizza, potatoes creamy puree (which eventually replace the sauce ,) crisp bacon, sweet corn, green onions and mozzarella cheese. The combo is perfect. The potatoes just do everything so rich and the texture of corn and bacon just get him out of this world. We always make corn for Thanksgiving, so I definitely plan to do this for my family next weekend. What is your favorite thing to do with Thanksgiving leftovers?

Mashed Potato Pizza
Ingredients
  • ½ lot of Pizza Crust
  • 1½ cups of potatoes mashed
  • 8 slices cooked bacon, crumbled
  • 1 cup sweet corn
  • 3 green onions, thin
  • 1 ½ cup grated cheese sliced ​​mozzarella
Instructions
  1. Preheat oven to 500F and heat your pan or pizza stone with her for at least 30 minutes
  2. place a sheet of parchment paper on your work surface and place your ball in the middle of dough.
  3. Using olive oil coated hands, and roll out the dough until it is thin and fit. (Forming a thin crust ridge around the edge.) I found using a little extra oil is easier to spread and do really thin.
  4. When your dough into the parchment, spread mashed potatoes on top, leaving the crust. Sprinkle the bacon, corn and green onions on top of the potatoes and top with cheese.
  5. Use a cutting board or a pizza peel to facilitate transfer of the pizza hot stone.
  6. Bake for 10-12 minutes, or until golden and crisp.
