What about small batches desserts I find damn irresistible ? Perhaps because they give me a chance to use my mini-size mixing bowls and whisk. Or maybe it is just the pleasure of something sweet and desire not to have to do a huge amount then having to resist eating. Just for me and two for you. I like this. Last year I shared Red Velvet Cupcakes for Two, and my Chocolate Chip Cookies for Two is a great favorite with both me and you guys. Sometimes you just need a little something you know?

The other reason I love this recipe is that it's so damn easy. You can make the dough in 5 minutes with a bowl and the icing is just as simple. No mixing or special tools are required, just a couple of small bowls and measuring spoons. From start to finish the whole project took me less than an hour. (I still have my cupcakes cool in the freezer to speed things up) and when at the end you have a rich fudge cupcake for you and friendship, it's just the best feeling ever.

The cake itself is actually (unintentionally BE-) vegan- So if you happen to prefer dairy / egg free shortening under desserts- or another slag for free butter in the frosting and you Vegan Chocolate Cupcakes for Two! You will never miss the egg in the cake because it is wet and soft. dark chocolate using cocoa powder in the cake and the frosting makes for such delicious flavor and frosting as fudge- is so rich and delicious.

Ok- now go make someone happy and beat a lot of stat!

dark Fudgy Chocolate Cupcakes for two
Ingredients
  • 3 tablespoons flour
  • 2 tablespoons sugar
  • 1½ teaspoons dark cocoa powder
  • ⅛ teaspoon baking soda
  • pinch of salt
  • water 2 tablespoon
  • 1 tablespoon vegetable oil
  • ⅛ teaspoon of extract vanilla
  • 1 chips tablespoons chocolate soup (optional)
for the icing:
  • 2 tablespoons unsalted butter, very soft
  • 1 tablespoon cocoa powder black
  • 4-5 tablespoons powdered sugar
Instructions
  1. Preheat oven to 350F. In a small bowl whisk together the flour, sugar, cocoa, baking soda and salt.
  2. Make a small well in the center of the bowl and add water, oil and vanilla. Whisk until smooth.
  3. Divide batter between two liners and sprinkle with chocolate chips if using. Bake for about 18 minutes or until a toothpick inserted into a cupcake comes out clean
For the Frosting :.
  1. In another small bowl, use a spatula to spread the butter around to ensure that it is super soft and supple.
  2. Add cocoa powder and stir in softened butter.
  3. Using the spatula, spoon or a small whisk, add the powdered sugar a tablespoon at a time until the icing is creamy and thick.
  4. Frost cooled cupcakes as desired.
