Happy Friday! I am happy to share these delicious pancakes with you, but I have to keep it short and sweet as there are about 20 empty boxes and a whole unpackaged apartment waiting for me. Moving day is 7 days away! (But who's counting?)
I whipped anyway these for breakfast last weekend, wanting to use my beautiful bag of apples for something non-desserty. I love French fries, so I fried these babies in a little butter, brown sugar and cinnamon, then added to my favorite recipe buttermilk pancakes. It was pretty simple, so perfect for the fall, and so so good. (The bacon side did not hurt.)
I mean it from the Apple windfall coming your way..I have to least one more apple recipe to come in the next week or two, and a tasty snack and a football fancy pastry I work today. After that- I really hope I can unpack my baking business first thing and get cracking in my new digs. I'll be sure to share some photos of my shiny new space on Instagram. - 1 cup all-purpose flour (or ½ cup of wheat flour paste and white ½)
- 2 teaspoons baking
- ½ teaspoon salt
- 1 cup buttermilk
- oil 1 tablespoon canola
- 1 large egg, lightly beaten
- 2 large tart apples, cut into slices whole. [butter
- 2 tablespoons
- 2 tablespoons brown sugar
- ½ cinnamon teaspoon
- in a large saucepan over medium-high heat, melt butter. Add brown sugar and cinnamon and mix. Add the apple slices and mix with the butter mixture to coat the potatoes well. Cook for about 2-3 minutes per side, depending on thickness, until apples are tender but not completely cooked.
- Remove from pan and set aside.
- In a large bowl, mix the dry ingredients, add the wet ingredients and whisk to combine
- Butter or spray a large skillet over medium heat. Pour ¼ cup measurer paste (do not meet too many on the plate both as they spread when you add the apples.) Place a slice of apple on each pancake. Cook until bubbles form and pancake is golden when you verify. Turn and repeat! Serve with warm maple syrup.
