Woohoo it's Pi Day! What is "Pi Day" you may ask? Oh you know ... PI ... aka .3.14 March 14th aka a day when people celebrate Pie. And I mean, what's wrong with a "holiday" that consists of pie? I love this course. I am particularly happy that day because not only I have a classic recipe to share, but an exciting gift and a special offer to all my readers! Sounds like a holiday for me!
As I was coming with a pie recipe to share with you today, I realized that I did not really very many pies on this blog all. I cooked a couple with summer fruits in August, but somehow I jumped on them during the fall and winter when pie is fashionable. And in my opinion- no cooking blog is really complete without a classic Apple Pie. So I decided to make one. Well actually, I made two. It does not seem that I made two though, since I used most adorable 7 plates ever pie thumbs. Seriously, they are the cutest- and they are just perfect for people like me who do not want more radicals pie portions in the refrigerator.
Another thing that makes my special pie is the classic "woven" lattice design on top. If you've noticed that it's not really woven- you're right. I used a fancy tool to make this pretty design in seconds. I mean seriously- is the best way to make a nice upper crust for your pie. Now do not take me reprehensible I really have fun weaving a lattice top, but sometimes it's nice to have a variety of crust decoration to change things up a bit do not you think?
- 1 crust recipe pie
- 2 tablespoons all-purpose flour, plus more for sprinkling apples
- 6 Granny Smith, peeled, cored and sliced
- ⅔ cup sugar, plus extra for pie top
- 1 tablespoon lemon juice
- 1 tablespoon of cinnamon
- ¼ nutmeg teaspoon
- clove pinch
- pinch of ground ginger
- 2 tablespoons butter unsalted
- 1 large egg beaten
- oven heat to 375 degrees . On lightly floured surface, roll the dough into two circles ⅛ inch thick with a diameter slightly greater than that of a plate of 11 inches. (If making 2 mini pies, roll the four towers in the circles of Thich ⅛ inch dough to fit the 7 inch pie plate) Press a circle pastry in the pie plate and chill in the refrigerator until the filling is ready.
- In a large bowl, combine apples, sugar, lemon zest and juice, spices, and flour. Mix well. Divide the potatoes in pan (s) pie. Dot with butter and cover with remaining dough circle or make lattice crust using the tool rolling or weaving of the pulp. If you are not a network, cut several steam vents across the top. Seal edges by crimping as desired. Brush with beaten egg and sprinkle with additional sugar.
- Bake until crust is brown and juices are bubbling, about 1 hour. (45 minutes if making 2 small pies) Cool on a wire rack before serving.
